Getting instructed on Chinese cooking wine and spices

We took a Chinese cooking class and learned to make spring rolls, scallion pancakes and pork steamed buns. We were met outside the metro stop by our instructor, Cherry, then walked to a neighborhood wet market where we purchased fresh ingredients for our menu and received a lesson on Chinese vegetables, herbs, meats and seafood. Who knew there was black chickens? Or so many varieties of eggs? Bull frogs, eels of all sizes, turtles and more swimming fish than an aquarium.
With purchases in hand we hiked back to the local apartment where we would learn how to mince, mix, stuff and wrap rolls and buns. Although we had six class members we made enough food for twelve and since three of the folks were tourists and didn’t have refrigerators in their rooms we got to box up and take home the leftovers!
